Tofu

A subtle and versatile ingredient – tofu can be fried, or cooked in soups and stews because it can absorb flavour very well.

Distinguish between silken tofu and firm tofu (tofu comes in many other different textures but these are the two most basic:

  • Silken tofu: contains the highest water content. Its creamy and custardy texture is very suitable in desserts and puddings. Add silken tofu with sugar syrup for simple tào phớ – a well-loved Vietnamese dessert.
  • Firm (regular) tofu: more commonly found used in savoury dishes, with higher protein content. Varies from soft (not silken) to medium firm to extra firm.
