An herb of the mint family, perilla is very fragranced and either comes in green or purple large rounded leaves with a jagged edge. The purple leaves are more common in Vietnamese cooking. They are used in a number of stews and simmered dishes as well as garnish in rice vermicelli dishes (bún).
