Dried Tofu Skin

Dried tofu skin is the protein-lipid film on the surface, produced while boiling soy milk in an open pan. They are sold in dried sheets. When rehydrated, it has a soft yet rubbery texture.

Commonly found in soups or hotpot in Vietnam, or used as a meat substitute in vegan dishes.
