Coconut oil

Like animal fats, coconut oil is solid at room temperature and liquid when heated. It provides flaky pastries, soft baked goods, and creamy frostings while being a vegan fat (non-dairy, not-animal-origin). Thus, it is gaining popularity amongst vegan dieters as a substitute for butter or lard. Coconut oil can be stored in airtight container and in a cool, dark place for up to 2 years.
