Beating is a technique of rapidly mixing and stirring – with the help of a mixer or by hand with a wire whisk – the ingredients to make them blended. Another purpose is to make a smooth and light mixture by incorporating as much air into the mixture as possible. Some cakes and baking toppings, such as meringue, require egg whites to be beaten until they are smooth and fluffy with many tiny air bubbles. This creates a soft structure to the baked goods without the use of a leavening agent like baking powder.
