Water spinach

Also known as morning glory, water spinach (rau muống) is abundant in Vietnam and used to be a staple vegetable of the poor. It can be stir-fried or cooked in sour soups.

Raw water spinach is also edible – it is usually split into thin strips and commonly seen in salads or used as garnish.
