Sugar – different types of sugar

  • Regular granulated sugar – most commonly used sugar in home cooking. It comprises of pure sucrose that is made from sugar cane and sugar beet.
  • Ultrafine sugar (a.k.a caster sugar or superfine sugar) – finer than regular granulated sugar. They are mostly used in cakes and cookies and produce a more uniform batter as well as support higher quantities of fat.
  • Sanding sugar – coarse sugar crystals that are used mostly for coating cookies, cakes and other baked product.
  • Coarse sugar – large sugar crystals that are effective to make syrups. It is often purer than fine sugar and thus makes clearer syrup.
