Palm sugar is made from the sap of Palmyra palm or the sugar date palm. Its color varies from light golden to rich dark brown. Palm sugar comes in different sizes; they can be packed into ball-shaped or thick rectangular shape or fine crystals. Palm sugar is commonly used in Asian sweet soups (desserts).
