This is dry sugar crystals made by the crystallization of dark syrup. It is slightly coarser and stickier in texture than regular brown sugar and has strong molasses taste. It can be used as a substitute for brown sugar but with much stronger flavor. Demerara sugar is good in BBQ sauce, marinades and savoury dishes. It is also used in tea, coffee or on top of hot cereals.
